Tater Tot Breakfast Casserole with Sausage
- 1 package ground breakfast sausage
- 1 package shredded Cheddar cheese
- 6 Blue Sky Family Farms Free-Range or Pasture-Raised Eggs
- Onion, optional
- Peppers, optional
- 1 (32 ounce) package frozen tater tots
- Breakfast Gravy (Bob Evans)
- Brown sausage and bake tater tots according to package directions.
- Scramble the eggs.
- Place tater tots in a baking dish and spread eggs, sausage and gravy over the top.
- Slide back into hot oven until gravy is hot.
- Cover with shredded cheese and allow to melt. Serve.
