Huevos Rancheros
INGREDIENTS:
- 4 Blue Sky Family Farms eggs
- Pico de gallo
- Refried beans
- 4 tsps extra virgin olive oil
- 4 tortillas
- 1 1/2 cups of your favorite red salsa
- 1/2 cup shredded monterey jack cheese
- Optional garnishes: cotija or feta cheese, sliced avocado, cilantro, hot sauce
PICO DE GALLO INGREDIENTS:
- 2 tomatoes, chopped
- 1/4 cup finely chopped white onion
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 1/4 tsp sea salt
REFRIED BEANS INGREDIENTS:
- 2 tsps extra virgin olive oil
- 1/4 cup finely chopped white onion
- 1 can black beans or pinto beans
- 1/4 cup water
- 1 tsp ground cumin
- 1/2 tsp lime juice
- Freshly ground black pepper
HOW TO MAKE:
- Prepare pico by combining the tomatoes, onion, cilantro, lime juice, and salt.
- To cook the beans: warm olive oil in small saucepan over medium heat. Add the onions and salt. Cook for about 3 to 6 minutes.
- Add cumin and stir constantly. Pour in the rinsed and drained beans and water. Stir, cover & cook for 5 minutes.
- Reduce heat to low, then mash beans. Cook for 2-3 more minutes until thickened.
- Meanwhile, warm the salsa and tortillas. Heat each tortilla individually, spread black bean mixture and sprinkle cheese on top.
- Fry eggs over tbsp olive oil. Place egg over prepared tortillas.
- Spoon warm salsa over each dish. Do the same with the pico de gallo. Sprinkle with fresh pepper.
